Mark it sold out and it is hidden from every board that shows it, so customers never order something you cannot make. When it is back in stock, it reappears.
Will my menu boards keep working if the internet goes down?
Yes. Each player stores its menus locally and keeps playing the last content it received. When the connection returns it syncs any changes you made in the meantime.
